π Tomato Basil Soup & Caprese Sandwich
Fresh, comforting, and built for dipping.
Thereβs something about the combo of rich tomato soup and a cheesy sandwich that just hits. But this version? Itβs elevated with heirloom tomatoes, creamy broth, fresh basil β and a golden sourdough caprese sandwich made to dunk.
This is one of those pairings that feels like a hug and looks great on camera.
π₯£ Tomato Basil Soup
Ingredients:
- 5 lbs heirloom tomatoes (any mix of colors)
- 1 large handful fresh basil leaves
- 4 cloves garlic, peeled
- 1 tsp sea salt
- Β½ tsp black pepper
- 1 cup heavy whipping cream
- 3 cups chicken broth
- Optional: microgreens for garnish
Steps:
- Roast the tomatoes + garlic at 400Β°F for 35β40 minutes β until blistered and soft.
- Place roughly cut into cubes on baking sheet, cut side up
- Peel after roasting/before putting into pot for soup
- Toss everything (including juices) into a food processor with basil, salt, and pepper.
- Blend until smooth, then pour into a pot with chicken broth. Simmer for 15 mins.
- Stir in cream, adjust seasoning, and serve hot.
- If using, sprinkle microgreens on top for serving
Tip: Save a few roasted tomato skins for garnish β looks great on camera.

Ingredients:
- 2 slices fresh sourdough
- Homemade basil pesto (or store-bought if you’re short on time)
- Fresh mozzarella, sliced
- Sliced tomato
- Fresh basil leaves
- Balsamic glaze
Steps:
- Toast your bread (pan, press, or griddle β get that crunch).
- Spread a generous layer of pesto on both sides.
- Stack with mozzarella, tomato, basil.
- Drizzle with balsamic glaze, add the top slice of bread, slice in half, and serve alongside the soup.
Optional add-on: a swipe of mayo or a garlic butter toast for extra richness.
